1/2 cup (75g) plain (all-purpose) flour
1 cup (220g) caster (superfine) sugar
3/4 cup (60g) dessicated coconut
1 teaspoon vanilla extract
125g butter, melted
1/2 cup (40g) flaked almonds
2 cups (500ml) milk
Preheat oven to 180C. Grease deep 24cm (9 1/2 inch) pie dish.
Combine sifted flour, sugar, coconut, eggs, vanilla extract, butter and half the nuts in large bowl.
gradually add milk, stirring, until combined. Pour mixture into dish.
Bake pie 35 minutes. Remove pie from oven, sprinkle top with remaining nuts; bake further 10 minutes.
Serve with cream if you like.
